Ingredients:

  • 3 cups whole wheat flour
  • 1 cup all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 cups warm water (110°F/45°C)
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt

Instructions:

  1. In a large mixing bowl, combine the whole wheat flour, all-purpose flour, and yeast. Stir to combine.
  2. In a separate bowl, whisk together the warm water, honey, olive oil, and salt until the honey is dissolved.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until a rough dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for about 10 minutes, until the dough is smooth and elastic.
  5. Shape the dough into a ball and place it in a lightly greased bowl. Cover with a clean kitchen towel and let it rise in a warm, draft-free place for 1-2 hours, or until doubled in size.
  6. Once the dough has risen, gently deflate it and shape it into a loaf. Place the loaf into a lightly greased 9×5-inch loaf pan, cover it loosely with plastic wrap, and let it rise for another 30-60 minutes, or until it reaches the top of the pan.
  7. Meanwhile, preheat your oven to 375°F (190°C).
  8. Once the dough has finished rising, remove the plastic wrap and bake the loaf in the preheated oven for 30-35 minutes, or until the top is golden brown and the loaf sounds hollow when tapped on the bottom.
  9. Remove the bread from the oven and let it cool in the pan for 5 minutes before transferring it to a wire rack to cool completely.
