Ingredients:

  • 3 lbs pork shoulder (also known as pork butt), trimmed of excess fat
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1/2 cup chicken broth
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • Hamburger buns or sandwich rolls, for serving
  • Coleslaw, for topping

Instructions:

  1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chopped onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.
  2. Add the pork shoulder to the skillet and brown on all sides, about 5 minutes per side.
  3. In a bowl, mix together the barbecue sauce, chicken broth, brown sugar, apple cider vinegar, smoked paprika, cumin, salt, and pepper.
  4. Transfer the browned pork shoulder to a slow cooker and pour the barbecue sauce mixture over it.
  5. Cover and cook on low heat for 8-10 hours, or until the pork is tender and falls apart easily with a fork.
  6. Once cooked, remove the pork from the slow cooker and shred it using two forks.
  7. Return the shredded pork to the slow cooker and mix it with the remaining sauce.
  8. Serve the pulled pork on hamburger buns or sandwich rolls, topped with coleslaw for extra crunch and flavor.
