  • 6 cloves garlic, minced

  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 onion, sliced
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • Fresh rosemary sprigs, for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, combine the minced garlic, chopped rosemary, thyme leaves, olive oil, salt, and pepper to create the herb rub.
  3. Place the beef roast in a roasting pan or baking dish. Use a sharp knife to make several small incisions in the roast.
  4. Rub the herb mixture all over the beef, making sure to press it into the incisions.
  5. Scatter the sliced onion around the beef in the roasting pan.
  6. Pour the beef broth and red wine (if using) into the bottom of the roasting pan.
  7. Cover the roasting pan with aluminum foil and roast in the preheated oven for about 1.5 to 2 hours, or until the beef reaches your desired level of doneness. Baste the beef with the pan juices every 30 minutes.
  8. Remove the foil during the last 30 minutes of cooking to allow the beef to brown.
  9. Once the beef is cooked to your liking, remove it from the oven and let it rest for 10-15 minutes before slicing.
