Ingredients:

  • 1 cup dry lentils, rinsed and drained
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 can (14 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened and fragrant, about 5 minutes.
  2. Add the chopped carrots and celery to the pot, and cook for another 5 minutes until slightly softened.
  3. Stir in the dried thyme and smoked paprika, and cook for 1 minute until fragrant.
  4. Add the rinsed lentils, diced tomatoes, and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, until the lentils are tender.
  5. Season the soup with salt and pepper to taste. Adjust the seasoning if needed.
  6. Serve the tomato lentil soup hot, garnished with chopped fresh parsley.
