Ingredients:

  • 1 cup dried lentils, rinsed and drained

  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 4 cups vegetable broth
  • 1 can (14 ounces) diced tomatoes
  • Salt and pepper, to taste
  • Fresh cilantro, chopped, for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until softened and fragrant, about 5 minutes.
  2. Add the diced carrots, celery, and bell pepper to the pot, and cook for another 5 minutes until slightly tender.
  3. Stir in the ground cumin, paprika, and cayenne pepper, and cook for 1 minute until fragrant.
  4. Add the rinsed lentils, vegetable broth, and diced tomatoes to the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the lentils are tender.
  5. Season the soup with salt and pepper to taste. If desired, adjust the level of spiciness by adding more cayenne pepper.
  6. Serve the spicy lentil and vegetable soup hot, garnished with chopped fresh cilantro.
